Day 59 - Wild Rice Soup

I made wild rice soup today, numm..

Cook wild rice in lots of water until it cracks open and rinse thoroughly.

Saute chicken, carrots, onion. Some people add celery.

Combine the ingredients into a soup pot, add chicken stock, cream, salt and pepper. If you like a thicker soup add corn starch dissolved in cold water or make a roux with flour and butter.

Breakfast - blueberry pancakes

Lunch - BLT

Dinner - Wild rice soup

Snack - rice krispie bars. Melt 1/2 a stick of butter, a large dollop of peanut butter, and a bag of marshmallows. Pour in a box of rice krispies and put on a sheet of wax paper that was sprayed with pam. The recipe on the box has too much marshmallow for my taste and the peanut butter is a great way to use up that jar of Skippy that my DH bought by mistake. When you put the bars on the waxed paper you have fewer dishes to wash.

Day 58 - Hero Sandwich

One of my daughters works at Subway so she brings home sandwiches occasionally. We call them sub sandwiches in Minnestoa. When I was in Pittsburgh they were hoagies, and down south, po'boys.

Snack - plum, salted nut roll

Day 57 - Egg With A Hat On

I must be on a theme. Egg with a hat on is an egg that is fried in a piece of bread (I use toast) that has a hole cut in it. You then cover the egg with the round cut out, hence the hat.

Day 55 - A Photoshop Inspired Glass of Wine

I'm taking a Photoshop class and was struggling with an assignment. I knew the selection wasn't being activated but I couldn't see what I was missing. I looked through books, watched Lynda.com videos, and tried doing the problem in varying order. After hours of work I drove to school hoping to catch anyone who knew the answer. The teacher was in his office and said "You need to merge down, I've had several people not know to do that. It's so obvious to me that I didn't think to mention that step." Grrr... I've never heard of merge down.

I did the remainder of my homework effortlessly and had a whomping glass of wine in an antique peanut butter glass.

Brunch - corn flakes and banana (I'm getting really tired of cereal)

Dinner - Tacos

Saturday, September 19, 2009

Lunch - chicken with salad

Dinner - more chicken and garden tomatoes

Day 52 - Thursday at Fridays

Just say no to mint. I ordered a mojito expecting the pretty pink thing on the menu and I got a salty concoction with a ton of mint (it looked a little like pesto). They graciously exchanged it for the more expensive Tropical Berry Mojito shaker and I ordered it without mint. I don't think it qualified as a mojito any longer but the the rum, strawberries, guava, and passion fruit were quite tasty since I couldn't detect the rum.

I guess the rum worked since the shaker is a little askew; that will teach me to sketch in a bar.

We purchased a cucumber plant at the Farmer's Market last spring. This is the resulting crop, a malformed vegetable that even the dogs are suspicious of and the raccoons have rejected.
